Black eyed peas and cabbage…. I cook it up every year on New Years Day for good luck! The south rubbed off on me in so many ways, and this is one of them! This meal not only is good luck for your new year but seriously… with all the health benefits, that alone alone is enough to just do your body some good after all the sugar and no sleep that happened over the holidays haha!
Black eyed peas alone are full of benefits, ranging from fiber, vitamin B, A, potassium and iron! I could pretty much live off of legumes so I never have a problem with that category! haha! The cabbage should probably called the worlds healthiest food, I mean people go on cabbage diets all the time and some how make it through them so they have to be full of goodness to be able to survive on cabbage soup for how ever long people go on that diet! haha! Anyway I totally just cook this cabbage with butter, salt, pepper and a little cajun seasoning and apple cider vinegar and it is the BOMB! Cabbage has tons of vitamins, minerals and fiber so it helps in detoxifying the body, lowers blood pressure, is an anti-inflamitory, promotes brain health, keeps you regular, and is a weight loss aid!
